Simple Salmon

 

 

What is for dinner tonight, Salmon! At least once a week we have fish, and salmon is a family favorite. This recipe is quick and easy, delicious and nutritious.

Simple Salmon Supper

4 – 6oz. Salmon Fillets

2 TBSP Olive Oil

Salt & Pepper to taste

2 tsp. minced garlic

1-2 tsp. Italian Seasoning or herbs de Provence or seasoning of your choice.

1 medium lemon, juice half the lemon, thinly slice other half

Preheat oven to 400 degrees. Place salmon fillets on a baking sheet lined with parchment paper. In a small bowl, whisk together the olive oil, salt, pepper, garlic, seasonings, and juice of half the lemon. Spoon mixture evenly oven salmon fillets and rub mixture until covered. Place a thin slice of lemon on top of each fillet.

Bake 12-15 minutes. Option to broil the last 1-2 minutes to create a crispy edge.

I serve this Salmon with roasted broccoli or asparagus, and roasted baby potatoes or rice pilaf.
