Greek Bowls

When the weather turns nice and the days are longer, I like to keep dinner light and easy! On a busy weekday when I am showing properties and/or running to a track meet, this is something I can prep ahead of time, and we can eat as we come and go. The kids love these bowls and build them to their taste. This week I used chicken, but I have used grilled shrimp in the past. No lie, we have these bowls once a week through the Spring and Summer! Greek Bowls

2-3 lbs marinated and grilled chicken, sliced (I marinate in Greek or Italian dressing)

White or brown rice, cooked for 6 servings

4-5 ripe plum tomatoes – halved, remove pulp and dice

1 large English cucumber – diced

½ red onion – diced

Greek salad dressing

Crumbled Feta cheese

Kalamata olives

Tzatziki dressing

Triangles of cut Pita bread

2 hard-boiled eggs, sliced (optional)

Banana peppers (optional)

Falafel (optional)

After the chicken has been grilled and sliced and while the rice is cooking, prepare the salad. Mix the diced tomatoes, cucumbers, and red onion together with Greek dressing, to your taste. Set-up “salad bar” style the chicken, salad, feta cheese, olives, Tzatziki, eggs, peppers, falafel, and pita bread on a table. Add a serving of rice to 6 shallow bowls.
