Delicious Deli Style Rubens

One of the biggest challenges of being a working Mom, often on appointments in the evening, is being sure my kids have delicious, somewhat nutritious, easy dinners they can prepare themselves. Sandwich night is their night to prepare dinner, and this is one of our favorite grilled sandwiches! The boys like the corned beef and Mairead prefers Turkey. Easy-peasy!

Deli Style Rubens

  • 1 loaf good Rye bread
  • 1 lb. medium deli sliced corned beef (can use pastrami or turkey)
  • .5 lb. lacey medium sliced lacey Swiss cheese
  • Thousand Islands dressing
  • 1 small bag of sauerkraut
  • Soft butter

Spray a large griddle or fry pan with cooking spray, heat medium high. Butter outside of rye bread, spread inside of bread lightly with the dressing. Place bottom slice of sandwich bread, butter side down on griddle. Place a slice of Swiss cheese, 2 slices of corned beef, a heaping tablespoon of sauerkraut, and a drizzle of dressing, add another slice of Swiss cheese. Place top slice of sandwich bread on top. Grill until golden brown and flip sandwich and grill until brown and cheese is melted. Serve warm. I serve with salad or tater tots, and always a side of deli pickles. I make 6 sandwiches, enjoy!
