It’s another snow day in Doylestown! Today I felt like baking and now there is just too much sugar in the house! My colleagues will benefit from that tomorrow when I bring these perfect heart shaped cookies to the office for a Valentines Day celebration. If Michael and Mairead are lucky, I will leave a few valentines treats for them as well. This recipe is easy and delicious, the cookie is almost cake like. 1 cup unsalted butter, softened
1 cup sugar
3TBSP milk
1 tsp vanilla
1 egg
3 cups flour
1.5 tsp baking powder
½ tsp salt
Cream the butter and sugar together. Add the milk and vanilla, mix well. Add the egg and mix until its just incorporated. In a small bowl mix the flour, baking powder and salt. Slowly add the flour mixture to the sugar mixture, mix until fully incorporated. Remove dough from mixing bowl and wrap in plastic wrap or wax paper, refrigerate 2-12 hours.
Remove dough from fridge half hour before rolling out. Line baking sheet with parchment paper. Preheat oven to 400 degrees. Roll out 1/3 of dough at a time to 1/8-inch thin, cut into shapes. Bake cookies for 5-9 minutes, do not let them brown. Cool for 2-5 minutes before moving to cooling racks. Cool completely before frosting. I frost with our favorite cream cheese frosting; buttercream works as well, or you can pipe designs. The cookies can be stored in an airtight container. Yummy!
