What is your favorite type of Pie? My husband, Michael, loves Apple Pie, Owen’s favorite is Blueberry Pie, especially when made from wild Maine blueberries. Key Lime Pie for Pi Day
Graham Cracker Crust:
1 ½ cups finely crushed graham crackers (24 squares)
1/3 cup of melted butter
Mix ingredients together and press into your 9-inch pie plate and bake at 350 for 10 minutes. Let cool while preparing the filling.
Key Lime Filling:
14 oz. can of sweetened condensed milk
3 egg yolks – whites not used
½ cup fresh squeezed lime juice (or Nelly & Joe’s Key West Lime Juice)
Combine the milk, egg yolks and lime juice and blend until smooth. Pour into your prepared graham cracker crust. Bake at 350 degrees for 15 minutes. Let cool for 10-20 minutes before refrigerating. Just before serving, top with fresh whipped cream (or creamy Redi-whip) and garnish with lime zest and lime slices.
